Chicken
Adobo
Adobo is a quick, easy, one pot recipe that everyone seems
to like, filipino or otherwise. It can even fit a healthy lifestyle
so you can't go wrong! Don't forget to wear your
adobo apron while making it ;)
Ingredients:
4 Chicken breasts sliced into 2 parts each (I use boneless and
skinless chicken breast meat but traditionally adobo is made
with leg and thigh pieces with skin and bones)
1/4 cup Soy Sauce
1 cup White Vinegar
4 cloves of fresh Garlic (can be decreased to 1 if desired)
3 Whole dried Bay Leaves
1 teaspoon Vegetable Oil (I usually use Olive Oil)
Ground Black Pepper
Salt
Water (if needed to cover all the meat when at the boiling stage)
Directions:
Peel and then pound the garlic cloves in a mortar and pestle.
Heat the oil in a saucepan big enough that it can hold all the
other ingredients in it. Brown the garlic just a little. Lightly
salt the chicken if desired and brown the chicken pieces in
the pan. You do not need to cook it all the way through. Add
all other ingredients. Cover and bring to a boil. Remove the
cover and simmer / low boil for approximately 20 minutes, stirring
occasionally.
Serve
over rice using the broth as a flavoring. Serves 3-4.
A
tasty variation is to use pork or cook pork and chicken at the
same time.
